Colusa may soon see a shuttered building on 5th Street turned into a new meat market, delicatessen, and pub.
The Colusa Planning Commission last week approved the design for Brent Nobles and Christian Cowsert to transform the old Baxter Auto Parts store into a new multi-business operation called “The Salty Pig.”
“Our plan is to open up a butcher shop, deli, and bar to serve our community,” Nobles said. “That’s the gist of it.”
Nobels, who owns the building, said the project will be completed in stages, starting with just the butcher shop, which will be located at the rear and north side of the building.
The initial project will involve repairs to the building’s exterior, including new paint and signage, along with an upgrade to the existing restrooms.
The butchery will process cattle, swine, goat, lamb, and poultry to USDA compliance. There will be no slaughtering on site, per city code, planning officials said.
The second phase of the project will include the meat market for customers to purchase packaged fresh meats like pork, chicken, and lunch meats. The second phase also includes the deli, where customers can purchase hot and cold sandwiches.
The third phase will include the bar and grill, which will include a kitchen area, bar, dining tables, axe throwing area, and stage.
Between the three operations, the business plans to employ 15 to 20 people, according to the application description.
The bar will sell beer, wine, and spirits and serve appetizers and pub food like nachos, burgers, sliders, and wings.
The meat market and deli is slated to be open seven days per week. The pub will be closed Monday. ■
